Raw Cacao and Raspberry Chocolate

A few weekends ago I bought some raw cacao powder and was intrigued to make some Raw Chocolates. I’m not on Paleo or part of any Raw Food Movement but for some reason was drawn to this recipe! It’s very easy to make, and for someone who has never eaten cacao before, especially in its raw component stage, I feel it’s a bit of an acquired taste. That maybe because I’m so used to chocolate in its sweet processed stage!! Raw Cacao has a bitter aftertaste, like dark chocolate but more earthy?? However, combined with the maple syrup and spices, it does take the bitter edge off. My verdict – They are ok, but I love chocolate, the sweeter the better, my husband who is a huge bitter dark chocolate fan loved it, as did the kids! Just recently I made some Biscotti with Raw Cacao Powder and loved it and I do add cacao powder now in all my baking, which is delicious. So I guess it just depends on how it’s used. By all means try this recipe it’s still great!!!

Raw Cacao and Raspberry Chocolate

Ingredients

100grams cacao butter
6 tablespoons cacao powder
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
a decent pinch of Sea salt flakes
2-3 tablespoons of maple syrup
2 tablespoons of desiccated coconut
2 tablespoons of broken up bits of frozen raspberries
Silicone moulds – I used ice trays

1. In a double broiler melt the cacao butter
2. In same pan add the cacao powder, spices, salt and syrup
3. Take pan off heat and stir in coconut
4. Prepare moulds
5. Pour a teaspoon of the chocolate mix into the mould, then add a few broken pieces of frozen raspberries, then cover it again with the chocolate mix until mould is full.
6. Freeze for half an hour or so, then demould and refrigerate in ziplock bags until eaten!!!
