Poached pears and spiced vanilla syrup is one of my favourite deserts. Is it possible to have sweet and healthy at the same time? I did use greek yoghurt 🙂
On a serious note, it really is a beautiful desert. Simple but complex in flavours – vanilla, cinnamon, star anise, and cloves compliments the yoghurt beautifully.

Poached Pears with Spiced Vanilla Syrup
3 pears I used Packham
200g golden caster sugar
200 mls water
1 vanilla pod, split with seeds scraped
1 cinnamon stick
2 star anise
-I also used cardamom pods (2) and a few cloves
Greek yoghurt to serve
Place the sugar and water in a saucepan over a medium heat. Allow the sugar to dissolve before adding the vanilla, cinnamon and star anise. Bring the mixture to the boil and let it simmer gently for about 10 minutes.
You should now have a beautiful, warm, spiced vanilla syrup – the perfect cooking liquor for your pears. Gently lower the pear halves into the syrup and simmer for a 10-15 minutes. Do not cook the pears for too long, it’s nice for them to retain their shape and a little bit of bite.
Serve with some thick Greek yoghurt and drizzle some of that glorious syrup over it.
I had excess syrup that I saved to drizzle over yoghurt tomorrow!
